Rock oysters with finger lime dressing
It doesn't get any easier than delicious fresh oysters with a zesty dressing. Then sit back and watch them slide off the platter.
Ingredients (7)
- 100ml chardonnay vinegar
- Finely grated zest of 1 lime
- 3 finger limes, halved lengthways, pearls scooped out
- 24 freshly shucked rock oysters
To serve
- Rock salt
- Salmon pearls
- Baby lemon balm leaves (optional)

1.Place the vinegar, lime zest and finger lime pearls in a bowl and whisk to combine. Arrange oysters on a bed of rock salt on 2 large serving platters. Drizzle dressing over oysters and top with salmon pearls and lemon balm, if using.
