Rum and pistachio choc fudge
A fruit and nut fudge recipe that can be packaged up and gifted to friends, just in time for Christmas.

Ingredients (7)

  • 450g white chocolate chips
  • 395g can sweetened condensed milk
  • 100g unsalted butter, chopped
  • 2 tbs dark rum
  • 1 cup (150g) unsalted pistachios
  • 1 cup (120g) dried cranberries
  • 100g glacé cherries

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Grease a 20cm square cake pan and line the base and sides with baking paper.
  • 2.
    Place chocolate, condensed milk, butter and rum in a heatproof bowl set over a saucepan of simmering water (don’t let the bowl touch the water). Stir until melted and smooth.
  • 3.
    Remove from the heat and stir in pistachios, cranberries and 50g glacé cherries until well combined.
  • 4.
    Pour mixture into the prepared pan and top with the remaining 50g cherries. Cover and chill for 4 hours or until firm.
  • 5.
    Cut into squares, to serve.
