Rustic Vanilla Damper
Add a delicious and super-easy soft loaf of vanilla damper to your daily tea run. This rustic recipe is best served with good quality butter and jam.
Ingredients (6)
- 4 cups (600g) self-raising flour
- 1 tbs caster sugar
- 1 tbs caster sugar
- 1 cup (250ml) buttermilk
- 1/4 cup (35g) pumpkin seeds (pepitas)
- Good-quality butter and jam (we used cumquat and vanilla bean jam), to serve
Method

1.Preheat oven to 180°C. Line a baking tray with baking paper. Combine flour, sugar and 1/2 tsp salt in a bowl, then gently fold in vanilla and buttermilk.

2.Lightly oil hands, then shape dough into a rustic loaf and scatter with pumpkin seeds.

3.Bake for 40 minutes or until outside is crusty and centre is soft. Serve with butter and jam.
