Rustic Vanilla Damper
Add a delicious and super-easy soft loaf of vanilla damper to your daily tea run. This rustic recipe is best served with good quality butter and jam.

Ingredients (6)

  • 4 cups (600g) self-raising flour
  • 1 tbs caster sugar
  • 1 tbs caster sugar
  • 1 cup (250ml) buttermilk
  • 1/4 cup (35g) pumpkin seeds (pepitas)
  • Good-quality butter and jam (we used cumquat and vanilla bean jam), to serve

Method

  • 1.
    Preheat oven to 180°C. Line a baking tray with baking paper. Combine flour, sugar and 1/2 tsp salt in a bowl, then gently fold in vanilla and buttermilk.
  • 2.
    Lightly oil hands, then shape dough into a rustic loaf and scatter with pumpkin seeds.
  • 3.
    Bake for 40 minutes or until outside is crusty and centre is soft. Serve with butter and jam.
