Saganaki kefalotyri with orange blossom honey and figs
For Ellie and Sam Studd, kefalotyri is a go-to cheese – for snacks, soirees and salad days. The Greek favourite is the star of this saganaki dish, and you’ll want a slice of the action.
Ingredients (7)
- 1 x 200g Will Studd selected Artemis Kefalotyri cheese
- 2 tbs plain flour
- 1/4 cup (60ml) extra virgin olive oil
- 4 oregano sprigs
- 1/4 cup (90g) orange blossom honey
- 3 figs, halved
- 1/2 lemon

1.Rinse the kefalotyri under cold water, then pat dry. Coat lightly with the flour, shaking off the excess.

2.Heat olive oil in a non-stick frypan over medium heat. Add the kefalotyri and cook for 1-2 minutes on each side, or until golden, adding the oregano sprigs in for the final minute of cooking. Remove the cheese and oregano and wipe the pan clean using a paper towel.

3.Place the pan over low heat. Return the cheese and oregano to the pan, add the orange blossom honey, and cook, swirling, for 1 minute or until the honey starts to bubble and the cheese is heated through. Remove from the heat, then arrange fig around the pan. Squeeze the lemon over the top and serve immediately.
