- 500g kipfler potatoes, peeled
- 300g French or thin green beans, trimmed
- 250g cherry tomatoes, halved
- 1/2 cup small black olives
- 425g canned tuna in olive oil, drained
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
Method

1.Place the potatoes in a saucepan of cold water, bring to the boil and cook over medium heat for 7-8 minutes or until tender, adding the beans for the last two minutes of cooking time. Drain and refresh in cold water, then drain again.

2.Thickly slice the potatoes and place in a large bowl with the beans, tomatoes, olives and tuna. Whisk together the olive oil and vinegar, season with salt and pepper. Toss the salad with the dressing and serve immediately.
