These simple summer rolls are a light and healthy snack for all year round.

Ingredients (6)

  • 12 medium round rice paper sheets
  • 200g sashimi-grade skinless salmon fillet, cut into 2cm-thick slices
  • 1 mizuna lettuce, washed and trimmed (substitute butter lettuce)
  • 2 Granny Smith apples, cored and cut into matchsticks

Wasabi mayonnaise

  • 1/2 cup (125g) Kewpie mayonnaise
  • 2 tbs wasabi paste

Method

  • 1.
    To make the wasabi mayonnaise, combine mayonnaise and wasabi in a bowl. Set aside.

    Fill a large bowl with cold water. Lay the rice paper sheets, salmon, lettuce and apple in front of you. Dip one rice paper sheet in the bowl of water, turning over to ensure that the sheet is completely wet before shaking off excess water. Lay rice paper sheet flat on a clean workbench.
  • 3.
    Place a few lettuce leaves and apple matchsticks along middle of rice paper. Starting with the edge nearest to you, carefully lift rice paper over filling, then roll rice paper and filling away from you. Just before you finish rolling, add a slice of salmon along length of roll, then roll up completely. Repeat with remaining ingredients until you have 12 rolls. Cut each roll into 2-3 pieces to look like rolled sushi.
  • 4.
    Top rolls with a small dollop of wasabi mayonnaise, or serve wasabi mayonnaise alongside rolls in dipping bowls.
