Salted duck egg salad
Salted duck eggs, a traditional Chinese delicacy, have an intriguing texture and taste deliciously rich and salty. Try them out in this simple salad.

Ingredients (9)

  • 2 1/2 tbs white vinegar
  • 1/4 cup (55g) caster sugar
  • 1 tsp sesame oil
  • 1 spring onion, thinly sliced
  • 2cm piece of ginger, cut into thin matchsticks
  • 1 small red chilli, seeds removed, cut into thin matchsticks
  • 1/4 cup coriander leaves
  • 1/4 bunch Chinese celery, cut into 2cm pieces
  • 1 salted duck egg or 2 regular eggs, hard-boiled, peeled, quartered

Method

  • 1.
    Place the vinegar, sugar and sesame oil in a small saucepan and bring to the boil, stirring to dissolve the sugar. Reduce heat to medium and simmer for a further 1 minute, then remove from heat and cool. Place remaining salad ingredients in a bowl and gently toss with the dressing.
