Nothing beats Phoebe Wood and Georgie Esdaile's delicious salted peanut brownie puddings. They're the perfect way to impress your guests!
Ingredients (12)
- 125g unsalted butter, chopped
- 300g dark chocolate, chopped
- 1 cup (150g) self-raising flour, sifted
- 3/4 cup (165g) caster sugar
- 1/3 cup (80g) brown sugar
- 1/4 cup (25g) Dutch cocoa, sifted
- 2 eggs, lightly beaten
- 1/4 cup (60ml) milk
- 1 tsp vanilla extract
- 1/2 cup roasted salted peanuts, plus 2 tbs extra, chopped
- 1/3 cup (95g) smooth peanut butter
- Vanilla ice cream, to serve

1.Preheat oven to 160°C. Place butter and 200g chocolate in a heatproof bowl set over a saucepan of barely simmering water (don’t let the bowl touch the water). Stir until melted and smooth. Add flour, sugars, cocoa, eggs, milk and vanilla and stir until just combined. Stir in remaining chocolate and the peanuts.

2.Divide between 3 x 2 cup-capacity ovenproof dishes (or use a 2L-capacity baking dish). Top with spoons of peanut butter and swirl with a butter knife. Top with extra chopped peanuts.

3.Place on a baking tray and cook for 35-40 minutes until set around the edges but slightly soft in the middle. Cool for 10 minutes before serving with ice cream.
