Topped off with smoked mozzarella and pecorino cheese, this sausage pizza is the answer to what to have for dinner tonight.
Ingredients (9)
- 3 garlic cloves, halved
- 4 rosemary sprigs, leaves picked
- 1/2 cup (125ml) extra virgin olive oil
- 1 bunch broccolini, trimmed
- 2 store-bought pizza bases
- 1/4 cup finely grated pecorino, extra to serve
- 2 (300g total) good-quality thick pork sausages, casings removed
- 1/2 tsp chilli flakes (optional)
- 200g smoked mozzarella, grated

1.Preheat oven to 200°C fan forced. Place garlic, rosemary and oil in a small saucepan over low heat and cook for 5 minutes or until the garlic has softened. Remove from the heat, and using a fork, lightly crush garlic into oil. Set aside.

2.Blanch the broccolini in boiling, salted water for 1-2 minutes until just tender. Drain and refresh under cold water.

3.Brush infused oil over pizza bases and top with pecorino. Scatter sausage meat over bases, top with broccolini, chilli flakes, if using, and mozzarella. Bake for 13-15 minutes until cheese is melted and golden. Scatter with extra pecorino and drizzle with any remaining infused oil to serve.
