Topped off with smoked mozzarella and pecorino cheese, this sausage pizza is the answer to what to have for dinner tonight.

Ingredients (9)

  • 3 garlic cloves, halved
  • 4 rosemary sprigs, leaves picked
  • 1/2 cup (125ml) extra virgin olive oil
  • 1 bunch broccolini, trimmed
  • 2 store-bought pizza bases
  • 1/4 cup finely grated pecorino, extra to serve
  • 2 (300g total) good-quality thick pork sausages, casings removed
  • 1/2 tsp chilli flakes (optional)
  • 200g smoked mozzarella, grated

Method

  • 1.
    Preheat oven to 200°C fan forced. Place garlic, rosemary and oil in a small saucepan over low heat and cook for 5 minutes or until the garlic has softened. Remove from the heat, and using a fork, lightly crush garlic into oil. Set aside.

    Blanch the broccolini in boiling, salted water for 1-2 minutes until just tender. Drain and refresh under cold water.
  • 3.
    Brush infused oil over pizza bases and top with pecorino. Scatter sausage meat over bases, top with broccolini, chilli flakes, if using, and mozzarella. Bake for 13-15 minutes until cheese is melted and golden. Scatter with extra pecorino and drizzle with any remaining infused oil to serve.
