This easy scallop mornay recipe is guaranteed to be the ultimate crowd pleaser at your next soiree. The natural sweet flavour of the scallops pairs with the warm creamy and cheesy sauce that is grilled until golden, making a luxurious and elegant entree.
Ingredients (8)
- 16 scallops, in shells
- 20g butter
- 1 1/2 tbs plain flour
- 2/3 cup (160ml) milk, warm
- 1/3 cup (40g) finely grated Gruyere
- 1 egg yolk
- 2 1/2 tbs finely chopped chives
- Sliced baguette, to serve

1.Preheat oven grill to high. Arrange four scallops (on shells) each in four individual ovenproof serving dishes. Alternatively, line a large baking tray with scrunched up sheets of foil. Arrange scallops on foil, nestling them in so they sit flat.

2.Melt butter in a small saucepan over medium-high heat. Add flour and cook, stirring continuously, for 1 minute until pale. Slowly whisk in the milk and cook, stirring continuously, for 3-5 minutes, until mixture thickens. Stir in half the cheese and the yolk and whisk until smooth. Season to taste. Spoon over scallops and scatter with remaining cheese.

3.Grill for 6-8 minutes, until golden and bubbly. Sprinkle with chives and serve with baguette to mop up the sauce.
