Seafood cocktail of king prawn, avocado and basil

Prawn cocktails are kind of retro, but the flavours still work a treat. We love them!
Ingredients (13)
- 1 carrot, peeled and diced
- 600g cooked king prawns, peeled and deveined
- 3 spring onions, thinly sliced (green part only)
- 1⁄2 cucumber, peeled, deseeded and diced into 5mm cubes
- 1 avocado, finely diced
- 2 tbs capers, coarsely chopped
- Grated zest of 1 lime
- 18g snow pea tendrils
Dressing
- 1 tbs lime juice
- 2 tbs verjuice
- 1 tbs mayonnaise
- 1 tbs olive oil
- 4 tbs fresh chopped basil
Method

1.For the dressing, place all of the ingredients (except the basil) in a bowl and whisk. Season with salt and pepper, then set aside.

2.Cook carrot squares in boiling water for 3 minutes. Drain, then rinse in cold water. Reserve 4 of the prawns and leave whole. Chop the remaining prawns into chunks and combine with the carrots, spring onions, cucumber, avocado, capers and lime zest.

3.Combine the dressing with the prawn salad. Set a small amount of the snow pea tendrils into the bottom of each cocktail glass and spoon in the salad. Serve each seafood cocktail garnished with a whole prawn and chopped basil.
