Ingredients (16)
- 50 seashells (optional), to decorate
- 36 ice cubes
- 250g each of clams and pipis
- 1 small red onion, finely chopped
- 2 garlic cloves, crushed
- 4 tablespoons chopped fresh chives
- 80ml (1/3 cup) red wine vinegar
- 160ml (8 tablespoons) extra virgin olive oil
- 1 cooked lobster
- 2 cooked blue swimmer crabs
- 20 cooked prawns
- 2 dozen oysters, freshly shucked
Lemon mayonnaise
- 2 cups good-quality mayonnaise
- 150ml creme fraiche
- 1 lemon, zested
- 2 lemons, juiced

1.To make the ice bowl, you will need two plastic bowls: one with a 3-litre capacity; another slightly smaller. Fill the larger bowl with shells and ice. Place the smaller bowl on top, pressing down into the ice. Weigh top bowl down with some tins.

2.Place in freezer and pour enough cold water between the two to fill the bottom bowl. Freeze overnight.

3.Place clams and pipis in a pan with 125ml water and 125ml wine. Cover and cook over high heat for 1-2 minutes. Discard liquid and clams or pipis that haven't opened. Allow to cool.

4.Pour 300ml hot water into top bowl, set aside for one minute, then drain. Lift off outer bowl.

5.Combine onion, garlic, chives, vinegar and oil in a large bowl and season.

6.To make lemon mayonnaise, placeall ingredients in a bowl and whisk to combine. Season well. Cut large seafood into bite-size pieces and toss with dressing. Pile all seafood into ice bowl and serve with mayonnaise.
