Seared sesame tuna with crispy ginger salad
Ingredients (9)
- 300g piece sashimi-grade tuna fillet, halved lengthways into 2 logs
- Sunflower oil, to brush and shallow-fry
- 3 tablespoons black or white sesame seeds
- 5cm piece ginger, thinly shredded
- 1 long red chilli, seeds removed, cut into matchsticks
- 2 teaspoons each brown sugar and fish sauce
- 2 tablespoons lime juice
- 1 long green chilli, thinly sliced on an angle
- 1/4 cup each coriander and mint leaves
Method

1.Heat a frypan over high heat. Brush tuna lightly with oil and sear for 20 seconds on all 4 sides until light golden but raw in centre. Coat logs in sesame, then enclose in plastic wrap. Freeze for 30 minutes.

2.Clean pan and return to medium heat with 2-3cm oil. Fry three-quarters each of the ginger and red chilli for 30 seconds until crisp. Drain on paper towel.

3.Whisk sugar, fish sauce and lime juice in a bowl. Add green chilli, herbs and raw ginger and red chilli. Toss to combine. Slice tuna, then arrange on plates with salad. Top with crisp ginger and chilli.
