Seoul Sling
When Matt Preston hit Seoul for a delicious story earlier this year, it was 30C and steamy. "The chilled 'grapefruitade' they serve there kept us going. That’s basically just fresh pink grapefruit juice and soda but it worked even better with a spritz of tonic and adding a nip of gin. This recipe makes enough for ten 160ml pours."
Ingredients (6)
- 1L (4 cups) grapefruit juice (fresh squeezed or good quality bottled; I prefer Ruby for the colour)
- 300ml Tanqueray London Dry Gin
- 300ml tonic, chilled
- 1 grapefruit, cut into thin wedges
- 10 springs of thyme, lemon thyme or Thai basil for garnish, depending on the food you are serving.
- Loads of crushed ice
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Pour your grapefruit juice in a large (2lt) jug. Place jug, gin and tonic in the fridge to chill until the guests arrive. If there is space in the freezer place your highball glasses in there to chill. Alternatively fill the glasses with ice before your guests arrive.

2.To serve, add the gin and the tonic into the jug.

3.Take the chilled glasses, draining them of any melted ice if required, and refill with ice. Pour over the Seoul Sling.

4.Garnish with an elegant slice of grapefruit and your herb of choice. Spank the herb and twist the wedge gently over the glass first to release their aromas.
