Shaved Brussels sprout, cranberry and hazelnut salad
Ingredients (10)
- 300g Brussels sprouts, very thinly sliced (a mandoline is ideal)
- 400g can chickpeas, rinsed, drained
- 2 cups wild rocket leaves
- 1/2 cup (75g) dried cranberries
- 1 cup (150g) roasted hazelnuts, skins removed
- 1 cup (80g) shaved pecorino
- 1/3 cup (80ml) extra virgin olive oil
- 1/4 cup (60ml) lemon juice
- 1 teaspoon thyme leaves
- 1/4 cup chopped chives
Method

1.Combine sprouts, chickpeas, rocket, berries, nuts and half the cheese in a bowl. Whisk oil, juice and herbs in a separate bowl and season. Toss with the salad and scatter with remaining 1/2 cup (40g) cheese.
