This quick, healthy winter salad is a vibrant mix of colours, flavours and textures.

Ingredients (10)

  • 300g Brussels sprouts, very thinly sliced (a mandoline is ideal)
  • 400g can chickpeas, rinsed, drained
  • 2 cups wild rocket leaves
  • 1/2 cup (75g) dried cranberries
  • 1 cup (150g) roasted hazelnuts, skins removed
  • 1 cup (80g) shaved pecorino
  • 1/3 cup (80ml) extra virgin olive oil
  • 1/4 cup (60ml) lemon juice
  • 1 teaspoon thyme leaves
  • 1/4 cup chopped chives

Method

  • 1.
    Combine sprouts, chickpeas, rocket, berries, nuts and half the cheese in a bowl. Whisk oil, juice and herbs in a separate bowl and season. Toss with the salad and scatter with remaining 1/2 cup (40g) cheese.
