Ingredients (10)

  • 300g king brown mushrooms sliced 1cm thick, or shiitake mushrooms
  • 650g small brussels sprouts, trimmed, outer leaves removed, finely sliced
  • 2 handfuls mint leaves, torn
  • 1 handful dill fronds
  • 120g manchego or Parmigiano Reggiano, half shaved, half finely grated

Maple dressing

  • 1/3 cup (80ml) maple syrup
  • 1/4 cup (60ml) sherry vinegar
  • 2 tbs Dijon mustard
  • 2 1/2 tbs lemon juice
  • 100ml extra virgin olive oil, plus extra to drizzle

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Season mushrooms with salt flakes and freshly ground black pepper and toss with a good splash of oil. Spread them out on the prepared baking tray and roast for 15 minutes or until cooked and slightly golden on the edges. Set aside.

    For the dressing, whisk maple syrup, vinegar, mustard, lemon juice and 1 tsp salt flakes together, then whisk in the oil until combined.

    Place sprouts and herbs in a large bowl and season with salt flakes. Tip in the mushrooms, pour half the dressing over, then add all the shaved cheese and half the grated cheese and toss gently. Top with remaining cheese and drizzle with remaining dressing to serve.

Recipe Notes

Paired best with something simple, such as a steak or roast chicken, or salt-baked celeriac sliced into steaks. For an interesting starter, serve with soft-boiled or poached eggs.
