Make this tasty pasta salad for a nautical-themed picnic just for the kids.

Ingredients (7)

  • 2 tablespoons olive oil
  • 2 onions, finely chopped
  • 3 bacon rashers, cut into batons
  • 350g shell-shaped pasta
  • 3 tomatoes, seeds removed, chopped
  • 3/4 cup (150g) full cream fetta, crumbled
  • 1 cup mint leaves, chopped

Method

  • 1.
    Heat 1 tablespoon oil in a large frypan over medium-low heat. Cook onion, stirring for 2-3 minutes until slightly softened. Add the bacon and cook, stirring, for 12-14 minutes until the fat has rendered and the onion is soft. Set aside to cool.
  • 2.
    Meanwhile, cook pasta in boiling, salted water according to packet instructions until al dente. Drain and refresh under cold water.
  • 3.
    Combine tomato, feta and mint in a bowl, season, then stir through bacon mixture and remaining 1 tablespoon oil. Add the pasta and toss to combine, then serve.
