Shell pasta salad with feta, bacon, tomato and mint
Ingredients (7)
- 2 tablespoons olive oil
- 2 onions, finely chopped
- 3 bacon rashers, cut into batons
- 350g shell-shaped pasta
- 3 tomatoes, seeds removed, chopped
- 3/4 cup (150g) full cream fetta, crumbled
- 1 cup mint leaves, chopped
Method

1.Heat 1 tablespoon oil in a large frypan over medium-low heat. Cook onion, stirring for 2-3 minutes until slightly softened. Add the bacon and cook, stirring, for 12-14 minutes until the fat has rendered and the onion is soft. Set aside to cool.

2.Meanwhile, cook pasta in boiling, salted water according to packet instructions until al dente. Drain and refresh under cold water.

3.Combine tomato, feta and mint in a bowl, season, then stir through bacon mixture and remaining 1 tablespoon oil. Add the pasta and toss to combine, then serve.
