Shrimp waldorf
Make America's classic Waldorf salad the main event with the addition of juicy prawns.

Ingredients (10)

  • 2 Granny Smith apples
  • 3 celery stalks, strings removed, thinly sliced
  • 2 tablespoons walnuts, roughly chopped
  • 2 tablespoons finely chopped dill
  • Crisp salad leaves (such as small cos leaves or shredded iceberg), to serve
  • 300g cooked prawns, peeled, tails intact, deveined

Dressing

  • 1 tablespoon thick natural yoghurt
  • 1 tablespoon good-quality mayonnaise
  • 2 tablespoons apple juice
  • 1 teaspoon lemon juice

Method

  • 1.
    For the dressing, combine the yoghurt, mayonnaise, apple juice and lemon juice in a bowl, and season with sea salt and pepper.
  • 2.
    Cut the apples into quarters and core, then finely chop. Add the apple, celery, walnuts, dill and salad leaves to the dressing, season with salt and pepper, and toss well. Top with prawns.
