Simple cheese fondue with bread sticks
Winter holidays are filled with heartwarming favourites, like this flavoursome cheese fondue treat.
Ingredients (8)
- 1 cup (250ml) white wine
- 1 garlic clove, crushed
- 1 2/3 cups (200g) Gruyere cheese, grated
- 1 2/3 cups (200g) cheddar cheese, grated
- 20 pieces day-old woodfired bread, toasted or chargrilled, cut into pieces
- 1 tablespoon extra virgin olive oil
- 1/2 cup (125g) mascarpone
- 1-2 tablespoons kirsch
Method

1.Soak 20 wooden skewers in cold water for 15 minutes.

2.Place wine and garlic in a saucepan over medium-low heat and cook for 5-6 minutes until reduced by half. Add Gruyere and cheddar and melt, stirring occasionally, until smooth and combined. Meanwhile, brush bread with oil, thread onto wooden skewers and chargrill until crisp and golden.

3.When you're ready to serve, stir the mascarpone into the fondue, add the kirsch to taste and enough boiling water to make a loose, smooth sauce. Sprinkle with paprika and serve with bread and rocket leaves.
