Iceberg and celery salad with lemon and anchovy dressing
Ingredients (10)
- 3 anchovies in oil, drained, finely chopped
- Juice of 1 lemon, plus 2 tsp finely grated zest
- 1/2 tsp caster sugar
- 1 tsp Dijon mustard
- 1 eschalot, finely chopped
- 1/3 cup (80ml) extra virgin olive oil
- 1 iceberg lettuce, trimmed, cut into wedges
- 2 celery stalks, taken from the heart, thinly sliced, leaves reserved
- 3/4 cup (150g) feta, drained, thinly sliced
- 1/2 cup dill sprigs

1.Combine anchovy, lemon juice and zest, sugar, mustard, eschalot and oil in a bowl and season with salt and pepper. Arrange lettuce on a serving plate and scatter with celery stalk and leaves, feta and dill sprigs. Drizzle with dressing just before serving.
