Skirt steak with green goddess hummus
It's hard to believe this Middle Eastern comfort food feast can be on the table in under 20 minutes!
Ingredients (13)
- 400g can each brown lentils, butter beans and borlotti beans, rinsed, drained
- 2 tbs tahini
- 2 garlic cloves
- 1 bunch flat-leaf parsley, roughly chopped
- 1 tsp ground cumin
- Finely grated zest and juice of 1 lemon
- 1/4 cup (60ml) extra virgin olive oil
- 1/2 onion, finely grated
- 2 tsp baharat
- 400g skirt steak, finely chopped
- 1 tsp brown sugar
- 400g green beans, blanched, chopped
- Crumbled feta, micro herbs & flatbreads, to serve

1.Set aside 1/2 cup (100g) lentils.

2.To make hummus, place remaining lentils in a food processor with butter beans and borlotti beans, tahini, garlic, parsley, cumin, lemon juice and 5 ice cubes. Whiz until smooth. Transfer to a serving bowl and set aside.

3.Heat oil in a large frypan over high heat. Add onion and baharat. Cook, stirring, for 1 minute, or until softened slightly, then add steak, sugar, reserved lentils and lemon zest. Cook, stirring occasionally, for 6-8 minutes, until browned.

4.Transfer to a bowl and top with green beans, feta and herbs. Serve with hummus and flatbreads.
