An Australian twist on a New York classic - the smoked salmon bagel.

Ingredients (9)

  • 4 bagels
  • 1 ripe avocado
  • 1 cup wild rocket leaves
  • 1 tomato, thinly sliced
  • 1/2 Lebanese cucumber, thinly sliced
  • 16-24 slices smoked salmon (depending on size)
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil

Method

  • 1.
    Preheat the grill to high. Split the bagels and toast under the grill for a few minutes until lightly golden. Place 2 halves on each serving plate.
  • 2.
    Halve the avocado and remove the stone. Scoop out the flesh and spread on bagels.
  • 3.
    Add some rocket, then tomato and cucumber slices. Top each bagel half with 2-3 smoked salmon slices, then red onion.
  • 4.
    Place the red wine vinegar and olive oil in a small bowl and whisk to combine.
  • 5.
    Drizzle the dressing over the bagels, then season with salt and freshly ground black pepper. Serve immediately.
