This simple salad will transport your taste-buds on a Mediterranean journey with the fresh flavours of home-made tzatziki.

Ingredients (10)

  • 2 baby cos lettuce, leaves separated
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 450g smoked trout, broken into pieces
  • 2 x 15cm rounds of Lebanese bread, toasted, torn into pieces

Tzatziki

  • 1 cup (280g) Greek-style yoghurt
  • 1 small Lebanese cucumber, seeds removed, finely chopped
  • 1 small garlic clove, crushed
  • 2 tablespoons lemon juice
  • 2 tablespoons dill leaves, roughly chopped

Method

  • 1.
    For the tzatziki, mix all ingredients in a bowl and stir to combine.
  • 2.
    Toss the cos with lemon juice and oil. Add the trout and torn bread.
  • 3.
    Arrange salad on serving plates and top with a spoonful of tzatziki.
