Smoked trout with tzatziki
This simple salad will transport your taste-buds on a Mediterranean journey with the fresh flavours of home-made tzatziki.
Ingredients (10)
- 2 baby cos lettuce, leaves separated
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 450g smoked trout, broken into pieces
- 2 x 15cm rounds of Lebanese bread, toasted, torn into pieces
Tzatziki
- 1 cup (280g) Greek-style yoghurt
- 1 small Lebanese cucumber, seeds removed, finely chopped
- 1 small garlic clove, crushed
- 2 tablespoons lemon juice
- 2 tablespoons dill leaves, roughly chopped
Method

1.For the tzatziki, mix all ingredients in a bowl and stir to combine.

2.Toss the cos with lemon juice and oil. Add the trout and torn bread.

3.Arrange salad on serving plates and top with a spoonful of tzatziki.
