One thing you should know about cooking Ireland's world famous soda bread is that it's quick and easy to make. Try it with our potato and bacon soup with parsley pesto recipe.

Ingredients (6)

  • 1 2/3 cups (250g) plain flour, sifted
  • 1 2/3 cups (250g) wholemeal plain flour, sifted
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 450ml buttermilk, plus extra to brush
  • 1/4 cup (20g) rolled oats

Method

  • 1.
    Preheat the oven to 200°C. Combine flours in a large bowl. Add bicarb, baking powder and 1 tsp salt and stir to combine. Make a well in the centre. Pour in the buttermilk, then using your hands bring the mixture together into a soft sticky dough.

    Turn dough out onto a floured surface. Knead lightly and form into a round. Place on a baking tray sprinkled with flour. Using a sharp knife, make two slashes in the top of dough to form a cross. Brush dough with extra buttermilk and scatter with oats.
  • 3.
    Bake for 1 hour or until golden and base sounds hollow when gently tapped.
