Maple-Candied Sweet Potato
The perfect side to a hefty serve of twice-cooked pork, or serve it for breakfast on toast for the ultimate weekend brunch.
Ingredients (9)
- 1 tbs olive oil
- 150g bacon rashers, sliced
- 1 onion, chopped
- 1/2 cup (125ml) tomato sauce
- 2 cups (500ml) vegetable stock
- 1 tbs molasses
- 1 tsp mustard powder
- 2 x 400g cans adzuki red beans, rinsed, drained
- 400g can kidney beans, rinsed, drained
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Preheat oven to 180°C. Heat oil in an ovenproof frypan over medium heat.

2.Cook bacon and onion, stirring, for 3-4 minutes until softened. Add tomato sauce, stock, molasses and mustard powder, and stir to combine.

3.Bring to a simmer, then reduce heat to medium-low and cook for 15 minutes or until thickened slightly.

4.Add beans and stir to combine. Transfer to oven and bake for 45 minutes or until beans are thickly coated in sauce.
