Maple-Candied Sweet Potato
The perfect side to a hefty serve of twice-cooked pork, or serve it for breakfast on toast for the ultimate weekend brunch.

Ingredients (9)

  • 1 tbs olive oil
  • 150g bacon rashers, sliced
  • 1 onion, chopped
  • 1/2 cup (125ml) tomato sauce
  • 2 cups (500ml) vegetable stock
  • 1 tbs molasses
  • 1 tsp mustard powder
  • 2 x 400g cans adzuki red beans, rinsed, drained
  • 400g can kidney beans, rinsed, drained

Method

  • 1.
    Preheat oven to 180°C. Heat oil in an ovenproof frypan over medium heat.
  • 2.
    Cook bacon and onion, stirring, for 3-4 minutes until softened. Add tomato sauce, stock, molasses and mustard powder, and stir to combine.
  • 3.
    Bring to a simmer, then reduce heat to medium-low and cook for 15 minutes or until thickened slightly.
  • 4.
    Add beans and stir to combine. Transfer to oven and bake for 45 minutes or until beans are thickly coated in sauce.
