Soy and star anise braised drumsticks

Phoebe Wood's soy and star anise braise drumsticks will have your guests coming up for seconds. Thye're easy to whip up and extremely flavoursome.
Ingredients (13)
- 1 cup (250ml) soy sauce
- 2/3 cup (160g) dark brown sugar
- 1/3 cup (80ml) kecap manis
- 1/2 cup (125ml) shaohsing (Chinese rice wine)
- 1 cinnamon quill
- 4 star anise
- 8 (1kg) chicken drumsticks
- Cooked soba noodles or steamed rice, to serve
- Black sesame seeds, to serve
Shallot & chilli sauce
- 3 long green shallots, finely chopped
- 2 tbs hot chilli condiment
- 2 tsp sesame oil
- 1/3 cup (80ml) rice vinegar

1.To make the shallot and chilli salsa, place all the ingredients in a small bowl and mix to combine. Set aside.

2.Place soy sauce, sugar, kecap manis, shaohsing, cinnamon and star anise in a medium saucepan with 3 cups (750ml) water and bring to simmer. Add chicken and cook for 45 minutes until chicken is very tender and dark. Cool slightly in the stock. Remove chicken using tongs. Divide 2 cups (500ml) stock among serving bowls. (Reserve remaining stock for another use.) Divide noodles between bowls and top with chicken. Spoon salsa over, and sprinkle with sesame seeds to serve.
