Spaghetti with lemons and tapenade

Making a tasty meal with just a few ingredients is easier than you think - the proof is in our tasty pasta dish with lemon, cheese and olive tapenade.
Ingredients (5)
- 350g spaghetti
- 2 lemons, zested, juiced
- 250g mascarpone
- 6 tablespoons parmesan cheese
- 4 tablespoons good-quality olive tapenade
Method

1.Cook the pasta following packet directions or until al dente. Drain, reserving 1/2 cup of the cooking water. Reserve 1 tablespoon of the zest and place remaining zest in a pan with the mascarpone, lemon juice and reserved water to just heat through. Season with salt and pepper, then return the pasta to the pan and toss to combine. Add 4 tablespoons of parmesan, then divide between bowls. Add a dollop of tapenade to each and serve with remaining parmesan and zest.
