Dig into this open-plan Italian style toastie.

Ingredients (6)

  • 160g thinly sliced speck or pancetta
  • 1 ciabatta loaf, halved horizontally
  • 2 tbs extra virgin olive oil
  • 1 garlic clove, crushed
  • 300g coarsely grated asiago cheese (substitute mozzarella
  • 1/3 cup (80ml) runny honey

Method

  • 1.
    Heat an oven grill to medium-high heat. Place speck on a baking tray and grill for 5 minutes or until light golden, then set aside. Place ciabatta halves on a clean baking tray and drizzle each half with 1 tbs oil. Spread each half with garlic, sprinkle with freshly ground pepper and grill for 4 minutes or until light golden. Divide asiago and speck slices between ciabatta halves, then drizzle over honey. Grill for 5 minutes or until cheese is melted and speck is lightly caramelised. Sprinkle with extra freshly ground black pepper and serve immediately.
