Spelt pasta, with tuna, spinach, chilli and lemon
Ingredients (5)
- 400g organic whole spelt fusilli
- 185g can tuna in springwater, drained, flaked
- Finely grated rind and juice of 1 small lemon
- 2 long red chillies, seeds removed, finely chopped
- 2 cups baby spinach leaves, roughly sliced

1.Cook pasta in a pan of boiling salted water according to packet directions. Drain, reserving 1/4 cup (60ml) cooking water.

2.Heat the same pan over medium heat. Add tuna, lemon rind and juice, and chillies, and stir for 30 seconds or until just combined. Add pasta and reserved cooking water. Remove from heat, add spinach and toss to combine.

3.Season to taste with sea salt and freshly ground black pepper and serve immediately.
