Spiced apple turnovers
Spiced apples are the star of this sweet treat, and are wonderfully paired with golden puff pastry.
Ingredients (10)
- 4 Granny Smith apples, peeled, cut into 1cm cubes
- 1/2 tsp ground cinnamon
- 1/4 tsp each ground nutmeg & ground cardamom
- 150g brown sugar
- 2 tsp vanilla bean paste
- 40g unsalted butter, chopped
- 1 tbs plain flour
- 4 sheets store-bought frozen butter puff pastry
- 1 egg, lightly beaten
- Icing sugar, to dust

1.Place apple, spices, sugar, vanilla, butter and flour in a saucepan over medium heat, stirring to dissolve the sugar and to keep the flour from forming lumps. Cook for 12-14 minutes until apple is tender. Set aside to cool completely.

2.Preheat oven to 200°C. Line a baking tray with baking paper.

3.Cut eight 15cm rounds from pastry. Fill half of each round with apple mixture, leaving a 1.5cm border. Brush border with egg and fold over to seal. Crimp edges with a fork or your fingers. Place on prepared tray and bake for 30 minutes or until golden. Dust with icing sugar and serve hot.
