Method

  • 1.
Preheat oven to 200°C. Place an apple half, cut-side down, on a chopping board. Insert a metal or wooden skewer through apple about ½ cm above the cut side. This will prevent you from cutting all the way through the apple. Make incisions 5mm apart. Repeat with remaining apple halves, then place, cut-side down, into a 26cm round baking dish. Add 2 tbs water to dish, cover with foil and roast for 15 minutes.
  • 2.
Meanwhile, for the crumble, combine all the ingredients and 1 tsp salt flakes in a bowl.
  • 3.
Remove the foil from the baking dish. Use a knife or your fingers to gently separate some of the apple slits and pour over the golden syrup so that it goes in-between the slits.
  • 4.
Add the crumble in-between the apples. Return the dish to the oven and bake for 20 minutes or until crumble is golden and apples are tender.
  • 5.
Remove from oven, sprinkle with extra pecans and drizzle with extra golden syrup. Serve with vanilla ice cream.
