Spiced maple-glazed nuts
You will go nuts for Katie Quinn Davies' clever Christmas gift idea.
Ingredients (8)
- 3 eggwhites
- 2 tablespoons maple syrup, plus extra to drizzle
- 5 cups mixed nuts (we used macadamias, almonds, cashews, pecans and hazelnuts)
- 1/2 cup (75g) pumpkin seeds (pepitas)
- 1/2 cup (80g) sunflower seeds
- 1 teaspoon chilli flakes
- 1 teaspoon cumin
- 1 teaspoon mixed spice

1.Preheat oven to 180°C. Line a large baking tray with baking paper. Place eggwhites in a large bowl and whisk with electric beaters until soft peaks form. Add maple syrup and beat to just combine. Set aside.

2.Place all remaining ingredients in a plastic container with a lid and shake well to combine. Tip nut mixture into eggwhite mixture, gently stirring to coat well.

3.Spread on the baking tray and roast for 10 minutes. Drizzle nuts with a little extra maple syrup, then toss to combine. Roast, tossing once, for a further 10-15 minutes until golden and toasted – watch the nuts to make sure they don’t burn. Cool completely, then place in gift bags.
