Spiced mayo hummus with crispy paprika chickpeas
Whip this dip up in no time at all for your next party. Your guests will love it.
Ingredients (9)
- 2 x 400g cans chickpeas, rinsed, drained
- ½ cup (150g) S&W Whole Egg Smoky Chipotle Mayonnaise
- Juice of 2 lemons
- 1 garlic clove, crushed
- 1 tsp ground cumin
- ¼ cup (60ml) olive oil
- 2 tsp smoked paprika (pimenton)
- Baby red shiso leaves, to serve
- Grissini, to serve

1.Place 1¼ cans chickpeas in a food processor and whiz until finely chopped. Add the mayo and lemon juice, and whiz until very smooth. Add garlic and cumin, and whiz to combine. Season with salt.

2.Meanwhile, drain and completely pat dry remaining chickpeas using paper towel. Heat oil in a frypan over medium-high heat. Add chickpeas and cook, stirring frequently, for 5 minutes or until golden and crisp. Stir through paprika. Drain on paper towel and cool before using. Season with salt.

3.Spread hummus into a serving bowl and scatter with fried chickpeas and shiso. Serve with grissini.
