Spiced plum sauce

With richness, sweetness and spice, this sauce pairs perfectly with any roast meat.
Ingredients (7)
- 3 oranges
- 100g caster sugar
- 1 cup (250ml) ruby port
- 10cm (50g) fresh ginger, sliced
- 2 whole cloves
- 1 cinnamon quill
- 250g plums, stoned, cut into 5mm pieces

1.Peel 2 large strips of rind from 1 orange and juice all oranges. Place juice and peel in a medium saucepan with the sugar, port, ginger, cloves and cinnamon. Bring to the boil over medium heat, stirring occasionally.

2.Cook for 15 minutes until reduced to a thick syrup. Add plums, and cook for a further 5-10 minutes until softened slightly (cooking time will depend on ripeness of plums). Season with salt flakes and serve warm or at room temperature.
