Spiced spinach & potato
Aloo palak, an dish made with spinach, potato and mild spices is a quick and easy Indian classic.
Ingredients (13)
- 1 tablespoon vegetable oil
- 1/2 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 100ml tomato passata
- 300g baby spinach
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1/4 teaspoon dried chilli flakes
- 1 tablespoon chopped fresh coriander
- 1 teaspoon grated ginger
- 150g boiled waxy potatoes (such as kipfler), peeled, quartered

1.Heat oil in a pan over medium heat, add cumin and fry until fragrant. Add onion and garlic and cook for 1 minute.

2.Stir in passata, spinach, spices, fresh coriander, ginger, potatoes and 2 tablespoons of water.

3.Cook for 1-2 minutes over medium heat to wilt spinach and heat potatoes.
