- 150g unsalted butter
- 100g dark brown sugar
- 1 egg
- 1 tablespoon honey
- 2 cups (300g) plain flour
- 1 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- Icing sugar, to dust

1.Using electric beaters, beat butter and sugar until creamy. Add egg and honey and beat to combine, then sift in flour and spices and, using a metal spoon, stir to form a dough. Enclose in plastic wrap and chill for 30 minutes.

2.Preheat the oven to 190°C and line 2 baking sheets with baking paper.

3.Remove dough from fridge and allow to soften slightly. Halve, then place 1 half between 2 layers of plastic wrap and roll out until 8mm thick. Remove wrap. Use a turtle-dove-shaped cutter (or other decorative cutter) to cut biscuits. Place on baking sheets. Repeat with remaining dough. Bake for 7 minutes until golden.

4.Cool and store in an airtight container. Serve dusted with icing sugar.
