Spicy ham and cheese melts with salsa

Ingredients (9)
- 5 eggs
- 1/4 teaspoon dried chilli flakes (optional)
- 1/4 cup finely chopped coriander leaves
- 4 large or 8 small ham slices
- 8 slices Jarlsberg cheese
- 8 slices white bread
- 40g unsalted butter
- 1 tablespoon olive oil
- Tomato salsa or sweet chilli sauce, to serve

1.Beat the eggs with 1/4 cup (60ml) water, the chilli flakes (if using) and the chopped coriander leaves. Season with salt and pepper to taste.

2.Sandwich the ham and cheese between the slices of bread to make 4 sandwiches. Dip into the egg mixture and shake off any excess.

3.Heat the butter and olive oil in a large frypan over medium heat. Add 2 sandwiches to the pan and weigh down with a heavy-based pan. Cook for 1-2 minutes each side until the outside is crisp and golden and the cheese has melted. Remove and cook remaining 2 sandwiches.

4.Halve sandwiches and serve with the tomato salsa on the side, or drizzle with sweet chilli sauce.
