Ingredients (9)

  • 5 eggs
  • 1/4 teaspoon dried chilli flakes (optional)
  • 1/4 cup finely chopped coriander leaves
  • 4 large or 8 small ham slices
  • 8 slices Jarlsberg cheese
  • 8 slices white bread
  • 40g unsalted butter
  • 1 tablespoon olive oil
  • Tomato salsa or sweet chilli sauce, to serve

Method

  • 1.
    Beat the eggs with 1/4 cup (60ml) water, the chilli flakes (if using) and the chopped coriander leaves. Season with salt and pepper to taste.
  • 2.
    Sandwich the ham and cheese between the slices of bread to make 4 sandwiches. Dip into the egg mixture and shake off any excess.
  • 3.
    Heat the butter and olive oil in a large frypan over medium heat. Add 2 sandwiches to the pan and weigh down with a heavy-based pan. Cook for 1-2 minutes each side until the outside is crisp and golden and the cheese has melted. Remove and cook remaining 2 sandwiches.
  • 4.
    Halve sandwiches and serve with the tomato salsa on the side, or drizzle with sweet chilli sauce.
