Spicy lamb gives this pizza a real point of difference. Friday night pizza just got a cool makeover!

Ingredients (11)

  • 200g low-fat natural yoghurt
  • Juice of 1 lemon
  • 2 tbs chopped mint
  • 180g lamb backstrap, roughly chopped
  • 1 1/2 tsp ras el hanout
  • 1 large garlic clove, chopped
  • 1/2 red onion, chopped
  • 1 x 26cm pizza base
  • 1 tbs pine nuts
  • 8 cherry tomatoes, halved
  • 1 tbs chopped coriander

Method

  • 1.
    For the mint yoghurt, combine yoghurt, 2 teaspoons lemon juice and mint in a bowl. Season with salt and refrigerate until needed.

    Preheat oven to 220°C. Process lamb, ras el hanout, garlic and onion in a food processor until minced. Season with sea salt and freshly ground black pepper.
  • 3.
    Place pizza base on a baking oven tray and scatter over lamb mixture, pine nuts and tomatoes. Bake for 8-10 minutes until lamb is cooked and pizza base is crisp and browned around edges. Remove from oven, scatter with coriander and drizzle over remaining lemon juice. Serve pizza with mint yoghurt.
