Spicy nachos
A simple recipe that is a tasty and filling accompaniment to any Mexican dish, especially soup.

Ingredients (3)

  • 230g corn chips
  • 100g grated cheddar
  • 1 tablespoon sliced pickled jalapeno peppers, finely chopped, or 1 fresh long green chilli, finely chopped

Method

  • 1.
    Preheat the oven to 200°C. Line a baking tray with foil.
  • 2.
    Arrange four stacks of corn chips on the tray, scattering each layer with a little cheese and chillies.
  • 3.
    Bake for 5-10 minutes until golden. Serve with chilli bean soup.
