A simple recipe that is a tasty and filling accompaniment to any Mexican dish, especially soup.
Ingredients (3)
- 230g corn chips
- 100g grated cheddar
- 1 tablespoon sliced pickled jalapeno peppers, finely chopped, or 1 fresh long green chilli, finely chopped
Method

1.Preheat the oven to 200°C. Line a baking tray with foil.

2.Arrange four stacks of corn chips on the tray, scattering each layer with a little cheese and chillies.

3.Bake for 5-10 minutes until golden. Serve with chilli bean soup.
