A Cajun-inspired dish that's guaranteed to spice up dinner!

Ingredients (8)

  • 4 chicken marylands
  • 1/3 cup (80ml) dark soy sauce
  • 3 tsp Cajun spice mixture
  • 1 tbs olive oil
  • 2 corn cobs, husks removed
  • 1 red capsicum, finely chopped
  • 440g can black beans,rinsed, drained
  • Coriander leaves, to serve

Method

  • 1.
    Place the chicken in a shallow dish, pour over the soy sauce, then cover and chill for 1-2 hours to marinate.
  • 2.
    Preheat oven to 220°C. Remove the chicken from marinade, reserving marinade, and pat dry. Sprinkle with Cajun spice and bake on a lined baking tray for 15 minutes. Reduce heat to 200°C. Cook, basting with pan juices and reserved marinade every 10 minutes, for a further 40 minutes or until glazed and cooked through.

    Meanwhile, heat oil in a large frypan over medium-high heat. Slice kernels from corn cobs and add to pan with capsicum, then cook, stirring, for 2-3 minutes. Add the black beans and cook for a further 2 minutes to warm through. Season.
  • 4.
    Serve chicken with corn salsa and garnish with coriander leaves.
