Spice things up come dinner time with this punchy Thai beef curry that's perfect for keeping warm on cold winter nights. This recipe originally appeared in Cooking with Tenina: More great recipes for the Thermomix, by Tenina Holder.

Ingredients (23)

Powder

  • 2 tsp each cumin and coriander seeds
  • 1 tsp cardamon seeds
  • 1 star anise
  • pinch of pink salt flakes

Paste

  • 3 dried red chillies, soaked in boiling water for 10 minutes
  • 1 handful coriander roots (reserve leaves)
  • 1 red onion, peeled, halved
  • 6-8 cloves of garlic, peeled
  • 1 thumb-sized piece galangal
  • 2 stalks lemongrass, white part only
  • soaking water from chillies, as required

Curry

  • 1.3kg gravy beef, cubed
  • 1 x 400g tin coconut cream
  • 100g fish sauce
  • 50g coconut sugar
  • 50g roasted, salted crushed peanuts

To Serve

  • peanuts
  • coriander leaves
  • steamed rice
  • coconut cream
  • lime juice
  • salt flakes
  • sliced red chilli

Method

  • 1.
    Place all curry powder ingredients into a dry fry pan and roast a few minutes until fragrant. Cool slightly before placing into the Thermomix bowl and mill 20 sec/speed 10.
  • 2.
    Add all curry paste ingredients and chop 6 sec/speed 6.
  • 3.
    Sauté 10 min/Varoma/speed 2.
  • 4.
    Blend 30 sec/speed 6, stopping to scrape down sides of bowl as needed.
  • 5.
    To make curry, add all ingredients to the Thermomix bowl and cook 45 min/100°C/ Reverse/speed 1.
  • 6.
    Serve with accompaniments as desired.
