Spicy Tomato and Anchovy Relish
With chilli, garlic and anchovies, this spicy relish is perfect for injecting a bit of flavour into any dish.

Ingredients (7)

  • 2 tbs olive oil
  • 2 garlic cloves,finely chopped
  • 1 long red chilli (seeds removed if you prefer less heat)
  • 400g canned tomatoes
  • 1 tbs tomato sauce (ketchup)
  • 1/4 cup small basil leaves
  • 3 anchovy fillets, chopped

Method

  • 1.
    Place olive oil, garlic and chilli in a pan over medium heat and cook, stirring, for 1-2 minutes until garlic softens slightly.
  • 2.
    Add remaining ingredients and simmer gently for 5 minutes until reduced and thickened.
  • 3.
    Season, then remove from the heat and allow to cool. The relish will keep, covered in the fridge, for 5 days.
