Raita is a traditional Indian accompaniment to curry made with yoghurt.
Ingredients (6)
- 1 tablespoon sunflower oil
- 1 garlic clove, thinly sliced
- 2 teaspoons cumin seeds
- 3 cups baby spinach leaves
- 3/4 cup (200g) thick Greek-style yoghurt
- Sweet paprika, to sprinkle
Method

1.Heat the sunflower oil in a frypan over low heat. Add the garlic, cumin and spinach leaves, then cook, stirring, for 1-2 minutes until the garlic softens and the spinach begins to wilt. Transfer to a bowl, then stir through the yoghurt. Season to taste, then dust with paprika and serve with curry.
