Raita is a traditional Indian accompaniment to curry made with yoghurt.

Ingredients (6)

  • 1 tablespoon sunflower oil
  • 1 garlic clove, thinly sliced
  • 2 teaspoons cumin seeds
  • 3 cups baby spinach leaves
  • 3/4 cup (200g) thick Greek-style yoghurt
  • Sweet paprika, to sprinkle

Method

  • 1.
    Heat the sunflower oil in a frypan over low heat. Add the garlic, cumin and spinach leaves, then cook, stirring, for 1-2 minutes until the garlic softens and the spinach begins to wilt. Transfer to a bowl, then stir through the yoghurt. Season to taste, then dust with paprika and serve with curry.
