Spinach and tomato bake
A great thing about this dish is that you can tweak it by adding your favourite ingredients, like diced zucchini or capsicum.
Ingredients (8)
- 750g frozen chopped spinach
- 1 punnet Sweet Solanato tomatoes
- 4 spring onions, fnely chopped
- 3 large eggs
- 300ml thickened cream
- ⅓ cup milk
- ½ tsp smoked paprika
- 1½ cups grated tasty cheese
Method

1.Preheat oven to 180°C. Lightly grease a 4-cup-capacity baking dish or pan.

2.Thaw spinach following packet directions. Squeeze out as much liquid as possible and place in baking dish. Halve tomatoes and add to spinach with white part of spring onion. Stir to combine.

3.Whisk eggs in a bowl, then add cream and milk. Stir in paprika and 1 cup of cheese. Season. Pour over spinach mixture and sprinkle with remaining cheese. Bake for 30 minutes or until set. Top with remaining spring onion. Serve.
