Splice slice

This Aussie classic gets a delicious makeover, just in time for summer.

Ingredients (7)

  • 300ml thickened cream
  • 1 can coconut condensed milk
  • ½ cup (55g) caster sugar
  • 1½ (325ml) cups fresh pineapple juice
  • 6 kiwi fruit, peeled, cores removed
  • Zest and juice of 5 limes
  • 20 wafers

Method

  • 1.
    Line an 18cm x 26cm deep-sided baking pan with two layers of plastic wrap.
  • 2.
    Place condensed milk and cream in a bowl and whisk until thick. Spread half cream mixture over base of prepared pan, then freeze for 2 hours or until firm. Chill remaining cream mixture.
  • 3.
    Combine caster sugar and pineapple juice in a saucepan over medium heat. Bring to a simmer and stir until sugar is dissolved. Set aside to cool completely.
  • 4.
    Place kiwi fruit flesh, lime zest and juice, and cooled pineapple juice mixture in a food processor and whiz until finely chopped. Strain into a bowl.
  • 5.
    Pour kiwi fruit mixture over frozen cream mixture and return to freezer for 2 hours or until firm.
  • 6.
    Pour remaining chilled cream mixture over frozen kiwi layer and return to freezer for 2 hours or until firm.
  • 7.
    Top with half the wafers, trimming in necessary. Return to freezer until ready to serve.
  • 8.
    Turn out slice onto a cutting board. Cover base of slice with a sheet of baking paper, place a second cutting board over paper, then flip. Using wafers as a guide, cut slice into sandwiches. Flip individual sandwiches and top each with remaining wafers.
  • 9.
    Serve immediately or wrap in baking paper and plastic wrap, and return to freezer.
