The spring cocktail that may well replace your gin and tonic
Over the traditional gin and tonic? Embrace a twist on the classic courtesy of Yoann Tartadi of new Melbourne bar Impala who has created the Fizzy Winds cocktail - a spicy rendition that merges the flavours of mandarin, rosemary, and peppercorn.
Ingredients (7)
- 40ml West Winds Cutlass gin
- 25ml lemon juice
- 15ml mandarin, rosemary and peppercorn syrup
- 5ml Dom Benedictine liqueur
- 2 dashes of Burlesque Bitters
- The white of one egg
- King Valley Prosecco

1.Combine all the ingredients into a cocktail shaker and shake thoroughly.

2.Using a fine strainer, poor all of the contents into a tall glass.
