Starfish Cookies
They may taste naughty but these crunchy, chocolate starfish cookies are surprisingly nice.
Ingredients (12)
- 100g unsalted butter
- 80g caster sugar
- 80g brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 80g plain flour
- 1/2 teaspoon baking powder
- 80ml (1/3 cup) milk
- 50g chopped walnuts, lightly roasted
- 100g good-quality dark chocolate, chopped
- 150g rolled oats
- 20g pitted dates, chopped
Method

1.Preheat oven to 190°C, line two large baking trays with non-stick baking paper.

2.Cream butter and sugars until pale. Add the egg and vanilla and stir to combine. Sift in flour, baking powder and a pinch of salt. Add milk, then stir in nuts, chocolate, oats and dates.

3.Form into 12 balls, then, using damp hands, form into 12 starfish shapes. Place on trays and bake for 12-15 minutes. Remove and set aside to cool.
