Ingredients (9)

  • 150g unsalted butter
  • 1/4 cup (60ml) runny honey
  • 1 1/2 cups (225g) plain flour
  • 1 tsp baking powder
  • 3 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbs thinly sliced crystallised ginger
  • 1 tbs raw sugar

Method

  • 1.
    Preheat the oven to 180°C. Line 3 baking trays with baking paper.
  • 2.
    Combine the butter and honey in a saucepan over low heat. Stir until the butter melts and the mixture begins to bubble. Remove the pan from the heat.
  • 3.
    Sift the flour, baking powder and spices together, then stir into the honey mixture until smooth.
  • 4.
    Roll tablespoons of the mixture into balls and place on the trays, leaving room for the biscuits to spread.
  • 5.
    Using your thumb, make an indent in the centre of each biscuit. Top each with a sliver of crystallised ginger and a sprinkle of raw sugar. Bake for 10 minutes, until golden. Cool the honey snaps on the trays.
