Stir-fried beef with Asian greens and Sichuan pepper and hoi sin
Forget the take-away, you can whip this up in less time and it will be much tastier!
Ingredients (8)
- 2 tablespoons peanut oil
- 600g beef fillet, thinly sliced
- 1 onion, thickly sliced
- 100g fresh shiitake mushrooms, thinly sliced
- 500g choy sum, chopped
- 1/4 cup (60ml) hoisin sauce
- Steamed jasmine rice, to serve
- 4 spring onions, thinly sliced diagonally

1.Heat 1 tablespoon peanut oil in a wok over high heat. Add half the beef and stir-fry until it just browned. Remove from wok and repeat with remaining beef.

2.Add remaining 1 tablespoon peanut oil to the wok. Stir-fry the onion for 1-2 minutes or until soft. Add shiitake and choy sum, and stir-fry for 1 minute. Add hoisin, then bring to the boil. Return beef to the wok to just heat through. Serve with steamed rice and top with spring onion.
